Recipe of the Week – Avocado Tuna Salad

Ingredients

  • 1/2 avocado
  • 1/2 tbsp lemon juice
  • 1 tbsp red onion
  • 1 tbsp celery chopped finely
  • 1 can solid white tuna
  • dash salt & pepper to taste

Instructions

  • Scoop out the flesh of ½ an avocado and place in a bowl
  • Add chopped onion, celery, lemon juice (about ½ tbsp), and seasonings and mix well
  • Drain tuna, add to bowl, and mix again
  • Place on Ezekiel bread, on top of a salad, or use to stuff a pepper
  • Optional: add other veggies (carrots, cucumber, peppers)
  • Enjoy!
